Now this totally depends upon you. You can take risk or settle and can greater perspectives. Now coming back to the preparation, coaching is not really required for understanding the concepts, but it will be beneficial to inculcate regularity. Regularity is a must! You should read books by foreign authors for concept building. Watch video lectures aswell. You must solve tonnes of questions. Practice time bound tests.

See if you want to do Applied Mathematics then IIT can be a good choice for you. As its a engineering institution it can give you a good background in Applied Mathematics and you can go for Data Science also as Electives in the curriculum. IIT will not be a bad choice for you and you can completely trust the curriculum there.

Indian Institute of Science, Bangalore will start the JAM 2021 counselling process by releasing the admission form from April 15 at jam.iisc.ac.in. The counselling of IIT JAM 2021 will take place to allot seats to the qualified students of JAM examination. Three admission lists will be released for the allotment of the seats offered. The first, second and third admission list will be released on June 16, July 1 and July 16. IIT JAM counselling 2021 will continue till July 20. Only those candidates who qualify the entrance examination are eligible for IIT JAM counselling 2021.

Unfortunately your rank is not sufficient to get admission in any IIT in mathematics, as the last cutoff for mathematics is 523, you need to get between 200- 480 rank so that you can get admission in any IIT in mathematics.
IIT Hyderabad,IIT ROPAR, IIT indore are three College where you can get admission easily if you get rank below 400.

If you want to apply for MSc or Joint MSc-PhD chemistry through IIT JAM then as per its eligibility criteria it specifies candidates to have mathematics at 10+2 level, along with having studied chemistry for three years in graduation, though you can have chemistry with CBZ combination but since you don't have maths at 10+2 level, it won't be possible for you to be eligible for the exam, kindly go through our page at https://university.careers360.com/articles/jam-eligibility-criteria for more clarity regarding this, though I must say you can try for other subjects in case you have interest such as biotechnology, as it's within the domain of bio group that you had at 10+2 level, and it's a booming field also, so you can appear for this subject in case you have interest for the same.
