Cut off means the minimum marks required for a student in order to cross the threshold of passing the examination. Now the score you are mentioning about the Economics paper in IIT JAM is good score and its good for getting newer IIT's if you are an UNRESERVED Student. The rank you can expect may lie in between 340-600. The variation is dependent on the type of students attempted, but this is the past year trend wise analysis.

It is quite difficult to predict the exact marks vs rank trend because it varies every year depending on total number of candidates appeared in a particular test paper, highest score, lowest score etc. With the given score you can expect your All India Rank to below 1,000. However, it is an estimated rank the actual rank may vary this year based on the factors mentioned above. To check your rank and score card you need to visit jam.iitr.ac.in and login with your credentials.
Nope! For the MSc Physics course in IIT's/NIT's/CFTI's through IIT JAM examination can only be done if you have a qualified score in Physics (PH). So with the help of Geology rank you can't opt for the course of Physics.
